Sautéed Brussels Sprouts and Asparagus with Lemon essential oil

Ingredients:
  • 1 bundle asparagus
  • 12 ounces Brussels sprouts
  • 2 tablespoons extra virgin olive oil
  • Seasoned salt
  • 2–3 drops Lemon oil
  • 3–4 cups water

Instructions:
  1. Bring water to boil.
  2. Halve Brussels sprouts and add to water. Boil for four to five minutes.
  3. While sprouts are cooking, heat up skillet.
  4. Drain sprouts and add extra virgin olive oil to skillet.
  5. Add sprouts, sprinkle with seasoned salt.
  6. Sauté sprouts for about three minutes, then add Lemon oil.
  7. Add asparagus and toss. Cover skillet and let cook, tossing a few times to coat asparagus.
  8. Cook until desired tenderness.

Tips:
For tender and grit free asparagus, rinse asparagus spears under cool water and rub with fingers before using. Snap off about an inch of the bottom of the spear to remove the woody part of the stalk.

Tangerine Cranberry Scones

Ingredients for the scones:
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ¼ cup granulated sugar
  • 1 teaspoon kosher salt
  • 4 tablespoons (1/2 stick) cold salted butter, cubed
  • 1 tablespoon grated tangerine zest
  • 1 cup chopped dried cranberries
  • ¾ cup plus 4 tablespoons heavy cream

Ingredients for the glaze:
  • 1 cup powdered sugar
  • 1 teaspoon grated tangerine zest
  • 1 tablespoon tangerine juice
  • 3 drops Tangerine essential oil

Instructions for the scones:
  1. Preheat oven to 220°C. Line baking sheet with parchment paper. In a large glass bowl, whisk together flour, baking powder, granulated sugar, and salt. Cut the butter into the mixture using a pastry cutter or fingers until the mixture resembles coarse sand. Add the tangerine zest and dried cranberries.
  2. Make a well in the center of the dry mixture and add ¾ cup of the heavy cream. Mix the dough together. It should have a slightly dry texture, but not crumbly. Add an additional 1-2 tablespoons of heavy cream if the dough seems too dry.
  3. Transfer the dough to a lightly floured surface and knead it for 1 minute. Form the dough into a round 1-inch thick, and use a knife or a pizza cutter to cut the round into 8 equal wedges. Arrange the wedges in a round, but about 1 inch apart, on the baking sheet. Brush the wedges with 4 tablespoons heavy cream and bake for 15 to 20 minutes, until the scones are golden and the edges are lightly toasted.

Instructions for the glaze:

  1. In a glass bowl, whisk together the powdered sugar, tangerine zest, orange juice, and tangerine essential oil. Drizzle the glaze on top of the warm scones. Serve warm!

Italian Oregano Bread Dip

  •  ¼ cup olive oil
  • 1-3 tablespoons balsamic vinegar to taste
  • ½ teaspoon Italian seasoning

Instructions:
  1. Gently mix together all ingredients in a bowl large enough to dip into.

Healthy Cinnamon Apple Cake

Ingredients:
  • 1 1/2 cups all purpose flour
  • 2 1/2 tbsp baking powder
  • 3/4 cup raw sugar
  • 1/2 cup olive oil
  • 1/2 cup orange juice
  • 1/2 cup walnuts
  • 2 small apples
  • grated 1 tbsp cinnamon
  • 1 drop Cinnamon Bark essential oil

Instructions:
  1. Preheat oven to 175°C. Lightly coat your tin with olive oil.
  2. Juice orange in bowl and set aside.
  3. In a separate bowl, mix together flour, cinnamon, and baking powder. Set aside.
  4. Grate the apples. Set aside.
  5. In a different large bowl, add sugar, olive oil, and Cinnamon Bark essential oil. Mix together using a handheld or free-standing mixer.
  6. Add the flour mix and the orange juice to a bowl with sugar and oil alternatively and keep mixing. It's okay if the mixture looks dry. The grated apples will provide additional moisture.
  7. Add the apples and the walnuts and fold in gently with a spoon until just combined.
  8. Pour the mixture into baking dish and bake for 45 minutes (or until a toothpick can be inserted and removed clean).
  9. Slice and enjoy.

Pumpkin Butter

Ingredients:
  • 820 gr. pumpkin puree (not pumpkin pie filling)
  • ⅔ cup coconut sugar (or substitute organic brown sugar)
  • ¼ cup grade-A maple syrup
  • ½ cup unsweetened apple juice
  • 1 teaspoon ground nutmeg
  • 2 teaspoons lemon juice
  • 1 toothpick Ginger oil
  • 1 toothpick Cinnamon oil
  • 1 toothpick Clove oil

Instructions:
  1.  Add all ingredients to a large saucepan over medium-high heat. Stir to combine.
  2. Once mixture begins to bubble, reduce heat to a simmer. Cook uncovered 15–20 minutes, stirring occasionally.
  3. Taste and adjust spices as desired.
  4. Cool completely and use immediately, or store in a glass container in the fridge for up to two weeks.
  5. Add this delicious butter to scones, muffins, toast, waffles, pancakes, oatmeal, and more.

Tips:
As the butter thickens the boiling pumpkin mixture can easily splatter and burn. To help with this you can cover the sauce pan with a lid, propped open with a spoon to allow steam to escape, and wear long sleeves to protect your arms as you stir.

  • 1 heaping cup fresh spinach
  • 1 heaping cup diced frozen pears
  • ½ cup plain non-fat Greek yogurt
  • 1 tablespoon almond butter

  • ½ teaspoon vanilla extract
  • 1 drop of Ginger oil

Instructions:
  1. Cut fresh pears and freeze for one hour.
  2. Put all of the ingredients in a blender and blend until creamy and smooth.

Ingredients:
  • 7 – 8 medium sized apples
  • 1 tablespoon sugar or sweetener of choice
  • 6 drops Cinnamon essential oil
 
Instructions:
  1. Preheat oven to 105°C.
  2. Put parchment paper onto two baking sheets.
  3. Combine sugar and Cinnamon essential oil in small bowl. Stir to combine.
  4. Slice apples into thin slices.
  5. Place apples onto parchment paper covered baking sheet in single layer.
  6. Sprinkle apple slices with cinnamon essential oil sugar mixture.
  7. Place baking sheets in preheated oven for 45 minutes. Halfway through, flip apples over.
  8. When edges of apples are curled, take out of oven and place on wire rack until cooled and crispy.
 
Tips: When slicing the apples, use a mandoline for best results.

Essential oils for Athletes

In the world of sports, essential oils have many benefits for athletes. A university with an NCAA Division I athletic program now works with doTERRA to receive instruction on essential oils and the AromaTouch® Technique. All of their campus training facilities have implemented doTERRA products into their training and physical therapy approaches with impressive results.


The Training: 
To help the trainers understand the benefits of doTERRA products, the university welcomed more information and training on essential oils. The trainings focused on oils such as Deep Blue®, doTERRA Breathe™, Lemongrass, White Fir, Lavender, and doTERRA On Guard®. doTERRA shared tips with the full staff of athletic trainers about how to dilute for sensitivity with Fractionated Coconut Oil, and the uplifting benefits of diffusing essential oils. The trainers, in particular the Coordinator of Football Performance, were impressed with the idea of first working oils such as White Fir and Lemongrass deep into the tissue with manipulation, and afterward applying the Deep Blue Rub.

Another significant challenge many athletes face is howto manage stress effectively. Balancing the emotional and physical demands of a taxing schedule can be tricky for students. The trainers had a particular interest in learning about the AromaTouch® Hand Technique to help relieve some of that tension. Samples of Lavender and other oils were also given to the trainers. One trainer shared, “Athletes often ask us for something to help them relax and sleep better. It’s not something you might always think about when dealing with sports. And I’m happy to be able to offer an athlete a natural solution first.” As they began to use the products, many trainers came back with questions about how they could better benefit from the products, not only to help those who already had problems, but also how they could use them to keep their athletes healthy.


The Impact:
Not surprisingly, Deep Blue® is now a favorite of most of the athletes, from the gymnasts on the balance beam to the football players on the field. The runners especially love Deep Blue rub to quickly get the relief and support they need. They quickly feel the powerful effects of Deep Blue and it helps them to keep going during training and therapy. The head trainer for the track team says, “When they put on the rub, they feel the warmth for a long time. This helps our athletes feel better physically and mentally.” One football player added, “Deep Blue works so well! I use it before and after my workouts and it helps me finish my workout strong.”

During the initial product training session athletic trainers asked about the benefits of diffusing essential oils aromatically. Once trainers started setting up their Aroma Lite diffusers with a blend of doTERRA On Guard® and doTERRA Breathe™ in the training rooms, athletes and trainers alike noticed a big difference in the smell and positive atmosphere. One trainer in particular came back after a recruiting trip and immediately noticed a change. He says, “The football training room has never smelled so good—I had to know what had changed.” Once he found out that the diffusers made the difference, he asked if there was any way he could get three diffusers for his home. Other trainers also implemented what they were learning at home—the head football trainer even uses the hand technique and Lavender to help his daughter relax and get a better night’s sleep.

Over time, the trainers’ confidence in essential oils has grown as they have used the products themselves and seen the performance of their athletes improve. The Director of Sports Medicine says, “I love the changes I am seeing with all our teams as they continue to use the products and learn more. We’ve seen a difference in the general atmosphere of our training rooms and our athletes are experiencing the benefits of essential oils thanks to doTERRA. The effect isn’t something I had expected but I’m very pleased with the result.”


Tips To Improve Athletic Performance Pre-and Post-Workout
  • Whatever sport you participate in, trainers recommend using different oils in both pre- and post-workouts.
  • Before any workout or therapy use Deep Blue rub, and then reapply post workout.
  • An AromaTouch® Hand Technique treatment before or after an event can help relieve tension.
  • Pre-workout some runners like to use Peppermint or doTERRA Breathe essential oil for a feeling of clear airways. Apply four to five drops to the chest five minutes before exercise or an event.
  • For improved confidence, use doTERRA Balance™ essential oil.
  • Post workout, place four drops of Lemon into 16 ounces of water and drink, then apply Lemongrass to calves.
  • Also try White Fir, Wintergreen, and Frankincense essential oils during post workout for muscle tension.

  • 2 frozen bananas
  • 1 teaspoon vanilla extract

  • 2-3 drops doTERRA On Guard Protective Blend
  • 1 cup ice
 
 
Directions:
 Combine all ingredients into blender and blend until smooth.
 
Note: For a garnish, add some whipped cream and pumpkin pie seasoning.

Fresh Garden Chowder

Ingredients:
  • 1 tablespoon butter
  • 2 medium zucchini, diced 
  • 1 medium onion, chopped 
  • 2 tablespoons fresh parsley, minced 
  • 1 toothpick Basil oil
  • 2 tablespoons flour 
  • 3 cups water 
  • 2 chicken bouillon cubes 
  • 1 drop Lemon oil 
  • 2 cups diced tomatoes 
  • 1 can low-fat evaporated milk 
  • 1 can corn 
  • ¼ cup Parmesan cheese, grated 
  • 1 cup cheddar cheese 
  • Salt and pepper to taste

Instructions:
  1. In a five-quart pan, sauté zucchini, onion, parsley, and Basil oil in butter until vegetables are tender.
  2. Stir in flour, salt, and pepper.
  3. Gradually add in water. Add the bouillon cubes and Lemon oil. Bring to a boil. Reduce heat and let simmer for five minutes or until corn is tender.
  4. Before serving, add in Parmesan and cheddar cheese. Garnish with extra Parmesan cheese and eat immediately.

The Lean Startup - review

​Almost finished with reading this great book called "The Lean Startup". I learned so much and get so many flashes back into my last 15 years of being a corporate executive. I really enjoy his way of explaining each situation and giving us a way to overcome it or change it for the better. Here a few quotes that I really like:

Raspberry Smoothie Bowl

Ingredients:
  • 2 cups frozen raspberries
  • ⅔ cup light coconut milk
  • 1 large frozen banana
  • 2–3 drops Lime oil
  • 1 tablespoon chia seeds
  • Shredded coconut
  • Shaved dark chocolate

Instructions:
  1. In a blender, combine frozen fruit, coconut milk, chia seeds, and Lime oil.
  2. Puree until mixture is smooth. 
  3. Pour mixture into bowl and top with shredded coconut, shaved dark chocolate, and any other desired toppings.
 
Tips:
  • For desired consistency, add more frozen fruit if too thin, or more water or coconut milk if too thick.
  • For a nutritional boost, add a handful of spinach or other leafy greens to this mixture before blending.

Topical Use of Essential Oils

Topical application is one of the ways you can experience the benefits of doTERRA essential oils. This form of application is unique because it allows for localized effects in the area of the application in addition to providing whole body support. Additionally, you can use essential oils topically when you want an easy way to target specific areas on your body.

Dilution Basics:
Dilution is a process in which essential oils are mixed with a carrier oil—a pure vegetable oil that helps “carry” the essential oil onto the skin. There are many benefits to dilution, including increasing the surface area of absorption, enhancing absorption through dry skin, and preventing sensitivity responses. 

doTERRA’s carrier oil of choice is Fractionated Coconut Oil due to its long shelf life and lightweight texture. 

Essential Safety Tips:

Citrus oils contain a unique category of photosensitive compounds called furocoumarins, so it is important to avoid exposure to sunlight, sunlamps, or other sources of UV light for up to 12 hours after topical application of these oils.
More is not always better! Essential oils are very potent, so a little goes a long way. Start with 1–2 drops and then increase the dosage as necessary.
Dilute, dilute, dilute! Dilution in no way diminishes the efficacy of essential oils and offers many benefits that can enhance your application experience. Conduct a simple sensitivity test when trying a new oil by applying a small amount of essential oil to an inconspicuous area. Check the spot each hour for several hours to ensure no sensitivity has occurred.

Different applications:

  • Face: Use essential oil as part of your regular skin care regimen to beautify the skin and promote a clear, healthy looking complexion.
  • Neck/Forehead/Temples: These areas are good to target feelings of tension. 
  • Abdomen: Application of essential oils, especially over major digestive organs.
  • Arms/Legs/Back: Massage onto the arms, wrists, legs, feet, or back after physical activity. 
  • Roof of the Mouth (Soft Palette)/Base of the Skull: Applying oils to these areas is an excellent way to help transform your mood and balance your emotions.
  • Chest: Rubbing oils onto the chest promotes feelings of clear breathing.
  • ​Bottoms of Feet: The feet have large pores that rapidly absorb essential oils, making this an ideal application site for generalized effect. Apply and massage in 2–4 drops of essential oil.


Other Effective Methods of Topical Application: 
  • Add a few drops of oil to a warm bath
  • Make a hot or cold compress by soaking a towel or cloth in water, adding essential oils, and then applying to the desired area- Add oil to a lotion or moisturizer and then apply tothe skin
  • Mix with water and use as a mouth and throat rinse

Vegetable Gnocchi

Ingredients:
  • 2 (10-ounce) bags potato gnocchi
  • 2 tablespoons coconut or olive oil
  • 1 bell pepper, sliced in strips
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 small zucchini, sliced
  • 3 cups of raw spinach
  • 8 ounces grape tomatoes, halved
  • 1 drop Basil essential oil
  • 1 drop Lemon essential oil
  • 2 teaspoons fresh lemon juice
  • ½ cup parmesan cheese
  • 1 teaspoon fresh chopped rosemary leaves
  • Salt and pepper to taste

Directions:
  1. Heat 1 tablespoon oil in a large nonstick skillet over medium heat. Add gnocchi and cook, stirring often, until golden brown. Transfer to a bowl and set aside.
  2. Add the remaining 1 teaspoon oil, onion, zucchini, and bell pepper to the pan and sauté, stirring, over medium heat.
  3. Stir in garlic and water. Cover and cook until the vegetables are soft.
  4. Add spinach and cook, stirring, until spinach starts to wilt.
  5. Stir in tomatoes, salt, pepper, lemon juice, essential oils, and fresh herbs.
  6. Stir in gnocchi and sprinkle with parmesan cheese.
  7. Cover and cook until cheese is melted.

Basil Spinach Pesto

“Use on sandwiches, noodles, chicken, etc. It smells divine!”

Ingredients:
  • 6 cups spinach leaves, washed thoroughly
  • ½ cup of walnuts
  • 2 cloves of garlic, peeled
  • 1 teaspoon sea salt
  • 1/8 teaspoon black pepper
  • ¼ cup Parmesan cheese
  • 1 tablespoon lemon juice
  • 2 tablespoons extra-virgin olive oil
  • 1 drop Basil essential oil
  • 2 drops Lemon essential oil

Directions:
  1. Combine all ingredients in a food processor.
  2. Mix until combined. Scrape sides to get all the spinach leaves, if needed.
  3. Store in air tight glass jar.

Farming—Potency
Another crucial element in providing a quality essential oil is guaranteeing that there is maximum potency.  For an essential oil to obtain a strong potency, the plant it originates from must be grown in the right environment. When plants are grown in optimal soil, temperature, and climate, they produce a higher quality of potency in the essential oil. 
To maintain this level of potency, doTERRA networks with experienced farmers around the world that intimately know how to grow plants in their native environment. This process is called sourcing. The sourcing process ensures that plants are taken care of properly and harvested at the proper stage by growers who have generations of harvesting knowledge. Once the plants reach their prime, they are then gathered and carefully distilled by artisans, making oils that are potent, consistent, and pure.

LOW-FAT SPINACH AND ARTICHOKE DIP

Ingredients:
  • 220 g reduced fat cream cheese
  • 480 mL plain, non-fat Greek yogurt
  • 2 tablespoons butter
  • 360 mL parmesan cheese
  • 400 g quartered artichoke hearts, drained and coarsely chopped
  • 110 g can diced jalapeños, drained
  • 280 g frozen spinach thawed and drained
  • 1–2 drops Marjoram essential oil

Directions:
  1. Melt together cream cheese, Greek yogurt, butter, and parmesan cheese in medium pot over medium heat uncovered, stirring frequently until melted and even consistency.
  2. Stir in chopped artichoke hearts, jalapeños, and spinach.
  3. Stir in 2–3 pressed garlic cloves and essential oil.
  4. Let bubble for a few minutes and serve with pita chips or bread.

PEACH CAPRESE with Wild Orange, honey, balsamic redution

Ingredients:
  • 2–3 ripe peaches, sliced
  • 125 g fresh mozzarella, sliced
  • 60 ml balsamic vinegar
  • 1 tablespoon honey
  • 3 drops Wild Orange essential oil
  • Fresh basil, for garnish

Directions:
  1. In small saucepan over medium heat, whisk together balsamic vinegar, honey, and Wild Orange essential oil until combined.
  2. Bring mixture to a boil. Decrease heat to low and simmer, stirring occasionally, until mixture is reduced by about half.
  3. Carefully stack peaches and mozzarella. Lightly drizzle with balsamic reduction and garnish with basil.

CURRIED BUTTERNUTSQUASH SOUP

SERVES 4

Ingredients:
  • 2 tablespoons coconut oil
  • 900 g butternut squash, peeled, seeded, and cut into small 1 cm pieces
  • 1 medium yellow onion, chopped
  • 4 garlic cloves, pressed or chopped
  • 2–3 tablespoons Thai red curry paste
  • 2–3 drops Coriander essential oil
  • 1 teaspoon ground cumin
  • ¼ teaspoon sea salt
  • ¼ teaspoon red pepper flakes
  • 1 tablespoon fresh lime juice
  • 950 ml vegetable broth
  • 225 ml full fat coconut milk

Directions:
  1. Heat oil in large pot over medium heat. Once oil is heated, add squash, onion, garlic, curry paste, Coriander essential oil, cumin, salt, and red pepper flakes to skillet. Stir to combine.
  2. Cook, stirring occasionally, until onion is translucent.
  3. Add vegetable broth. Bring mixture to boil, reduce heat, and simmer until squash is soft.
  4. Remove from heat and let cool. Working in batches, transfer contents from pan to blender. Securely fasten the lid and purée mixture until smooth.
  5. Transfer puréed soup to serving bowl and repeat until contents are smooth.
  6. Stir lime juice and coconut milk into blended soup and serve.
